This artisanal cheese is a washed rind variety made from cow's milk, blending characteristics of Gouda with the Swiss Appenzeller. You can find it aged for 8 months, and during December, a special reserve aged for 18 months is also available. Its aging process on cedar planks infuses the cheese with deep, robust flavors.
The cheese boasts a rich and creamy taste with a hint of sweetness and features prominent "eyes" or holes throughout its structure. The milk for this cheese is sourced exclusively from our family-run dairy farm. It complements white wines like Chardonnay and Sauvignon Blanc beautifully, and it's also a perfect match for Pilsner-style beers.
